Chicken Meatballs

Ingredients

  • 1 lb ground chicken, white meat
  • 1 large zucchini, coarsely grated
  • 3-4 scallions, thinly sliced
  • 1 medium egg
  • 2 tbsp chopped mint
  • 2 tbsp chopped cilantro
  • 2 garlic cloves, crushed
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp coarse ground black pepper
  • 1/2 tsp cayenne
  • 2-3 tbsp olive oil

Instructions

  1. In a large bowl, combine all the ingredients and mix well.

  2. Form into 2-inch meatballs.

  3. Heat a large, deep skillet over medium heat and add the olive oil.

  4. Pan fry the meatballs until browned on all sides. Cook in batches if necessary.
