I’ve always known that Lisa Ende is a great cook. What I really learned at her class was that she’s a smart cook. Apparently everyone else knew! When she put together her Easy Weeknight Meals class it was due to demand from her devoted fans. Her confidence in the kitchen is on display as she literally prepared 4 full dinners in less than 3 hours. Lisa gave us tips along the way that make meal prep a snap. Her ease in the kitchen coupled with great recipes made this class fun and delicious!
Lisa’s Easy Weeknight Meals
Chicken Meatballs with Zucchini Primavera
This Chicken Meatballs recipe was a learning bonanza. First, Lisa showed us how she makes red sauce. She throws tomatoes, garlic and basil into a baking dish uncovered and puts it in the oven at 350º for 1 hour to roast. After it’s cooled, she throws it all into the blender and voila! The next tip was showing us how to spiralize zucchini. It was sooo easy and I’ve been paying a fortune buying it at Whole Foods. The last “a-ha” for this recipe was when she put a whole butternut squash in the oven to cook at 350º. No cutting in half or anything. I don’t know how many of you have every wrestled with a butternut squash but power tools would be more helpful than a knife. Once cooked whole in the oven, it was easily cut apart.
Crispy Sheet Pan Chicken
The lesson with this recipe is that Lisa marinates the chicken in an egg mixture before she coats it. That’s so much easier than dipping chicken into egg, then dipping into bread crumbs, etc… Her way, all the chicken sits in the egg mixture up to 4 hours. Then it’s just dipped into bread crumbs right before cooking. The chicken was really moist too. The other great thing is that she cooked the potatoes and green beans right on the same pan with the chicken after par boiling.
Korean Short Rib Tacos
Another amazing recipe. First tip was to make the marinade in a ziplock bag so you don’t get any bowls dirty. Then it all went into the slow cooker. I don’t think you can find an easier recipe with less prep time. The slaw was delicious and could be made in advance. If you’re busy all day, this is the perfect dinner to come home and assemble in a few minutes.
Sesame Crusted Salmon
